Flaked Rice
Flaked rice is pre-gelatinized and does not require a cereal mash. It cannot self-convert so it will need to be mashed with a diastatic malt or enzymes. Flaked rice is used to add neutral fermentable sugars to assist in drying out a beer. It is very popular for producing light and crisp American and Japanese style lagers. Flaked rice will finish drier than flaked corn. Can make up to 40% of the grist.
