White Labs WLP300 Hefeweizen Ale Yeast is widely used for creating authentic German hefeweizen. It brings a high level of isoamyl acetate to lend the beer banana-forward notes accompanied by familiar clove notes. Low flocculation offers a signature hazy appearance for this wheat-style beer. Brewing techniques influence flavor/aroma; underpitching is recommended for classic characteristics. A ferrulic acid rest at 110° for 15 minutes will accentuate the clove characteristics of this yeast.
