Briess' Cherrywood Smoked Malt is a pale barley malt that has been smoked with cherry wood, resulting in a rich, sweet, and bold smoky taste. While it behaves similarly to a base malt in the brewing process, this smoked malt adds a powerful depth of flavor. It is recommended to use a maximum of 20% in lighter styles such as Scottish Ales and Oktoberfests, while Stouts and Porters can handle up to 60%. This unique cherry wood-smoked malt from Briess provides an interesting alternative to traditional beechwood-smoked malt in German Rauchbiers, as well as the commonly used peat-smoked malt in English and Scottish styles.
Would make a compelling addition for an American style smoked malt whisky as well.
